Stir Fried Glass Noodle

With many assorted types of noodles in the market today there was one type which stood out when deciding what to prepare for dinner that evening. Translucent threads of noodle made from mung beans had been selected. Also known as glass noodles, these deliciously silky strings are popular in Asian cuisine and are frequently used. Thus, I decided to make a stir fry called Pad Woonsen (ผัดวุ้นเส้น), Stir Fried Glass Noodle.

Main Ingredients

  • 200 grams meat (chicken, pork, beef)
  • 1 packet mung bean noodle (glass noodle)
  • 3-4 cloves minced garlic
  • 2-3 pcs red chili peppers
  • 2 stalks green onion
  • 1/2 bulb white onion
  • 1 pc red tomato
  • 1 egg

Seasoning Ingredients

  • 3 Tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tsp granulated sugar

Creating your Dish

  1. Soak mung bean noodle in water for 10-15 minutes to hydrate it
  2. Heat the pan with oil and add meat, garlic, chilis, and onion
  3. As the meat cooks and onion becomes translucent add a freshly cracked egg
  4. Stir continuously until egg is cooked then add 1/2 a cup of water
  5. Mix in the seasoning ingredients until dissolved in the water mixture
  6. Add glass noodle and tomato into the mixture and stir until sauce coats the noodles
  7. Turn off the flame and garnish with green onions
  8. Serve and enjoy
